From TulsaWorld.com by Nicole Marshall Middleton, World Scene Writer With 2011 behind us, it’s time to see what’s on the horizon for 2012 in foodie news. High food prices are a topic of almost everyone’s conversation. And healthy food alternatives are at the top of the list. We took some notes from national consulting firms and popular food magazines to come up with some hot trends for food this year. 1. Honey and agave sweeteners: Look for honey and agave to pop up in more foods. Both are advertised as a more natural alternative to high-fructose corn syrup. Agave nectar is a natural sweetener that is derived from a variety of agave species, including blue agave and rainbow agave. In comparison to honey, agave nectar has a very low-glycemic index, and could be a safer sweetener for diabetics. The sweeteners are being added to everything from drinks to medicines. Giada De Laurentiis’ Recipe for a Happy Life 08/15/10

From Giada's feature in Shape Magazine: Like many women, Giada had to struggle with her weight after giving birth. "I gained 22 pounds, which doesn't sound like much, but I'm only 5'3", so it was a lot for my height," she says. "Because I had a C-section, I couldn't work out for a long time afterward, so I knew the best way for me to lose weight was through diet." A self-professed sweets addict (she used to put 6 to 8 tablespoons of sugar in her coffee!), Giada eliminated white sugar and cheese for six months. "The first two weeks were hard," she says, "but I got over the hump by eating a lot of fruit and replacing sugar with healthier alternatives, like brown rice syrup and agave nectar." Arizona Foothills Magazine Features Nature’s Agave 08/04/10

I love to bake. And because all my favorite cookie and cake recipes call for oodles of sugar, I try to cut the amount which can sometimes affect the taste. However, my new favorite baking tool is agave nectar, and I adore Nature’s Agave. Made from 100 percent certified organic Weber Blue Agave, Nature’s Agave is a more healthful alternative to sugar. Nature’s Agave nectars are Kosher-certified, naturally gluten-free, low on the glycemic index and are produced organically without enzymes, chemicals or additives. In addition to baking, agave comes in handy when making ice teas and tastes stellar on fish (I learned that trick from Giada!). Fete a Fete Review of Nature’s Agave 07/13/10

Excerpt from Fete a Fete review: "As a proud sweet tooth, I'm always curious about alternatives for processed sugar and high fructose corn syrup. I got a chance to test the new agave nectars from Nature's Agave and I'm pretty impressed. I've tried other blue agave nectars from other brands and a couple of them have a slight bitter aftertaste. I personally prefer the Amber (lovely butterscotch and caramel notes) and Raw (deep molasses tone) flavors. For the raw food purists, both of these are produced below 118 degrees Fahrenheit to retain the nectar's natural enzymes. All three flavors are made from mature, hand-harvested Weber Blue Agave plants to ensure their premium quality." Read the full review here: Fete A Fete Blog

Dr. Weil Prefers Agave Nectar 04/29/10

Blog post from Dr. Weil's web site: "Agave nectar is a natural sweetener that ranks relatively low on the glycemic load scale. It is sold in health food stores and online and has been growing in popularity in recent years. Although it provides as many calories as sucrose (table sugar), it is much sweeter, so you can use less of it - say one-quarter of a cup to substitute for one cup of sugar in most recipes. I like the pleasant, neutral taste of agave nectar and use it as my main sweetener, although I don't use sweeteners very often, and when I do, I use small amounts." For the full article, click here.

Tequila Plant May Help Fight Bone Loss 03/22/10

An ingredient in agave -- the plant used to make tequila -- may help fight bone-weakening osteoporosis and other diseases, Mexican researchers say. Agave, artichokes, garlic, onions and chicory are rich, natural sources of fructans -- nondigestible carbohydrates consisting of molecules of fructose linked together into chains, according to background information in a news release from the American Chemical Society. "Experimental studies suggest that fructans may be beneficial in diabetes, obesity, stimulating the immune system of the body, decreasing levels of disease-causing bacteria in the intestine, relieving constipation and reducing the risk of colon cancer," Mercedes Lopez, of the National Polytechnic Institute in Guanajuato, said in the news release. Previous research has also suggested that fructans stimulate the growth of beneficial bacteria in the large intestine in a way that increases the body's absorption of minerals, including calcium and magnesium, which are needed for bone growth. "These results suggest that the supplementation of the standard diet with agave fructans prevented bone loss and improved bone formation, indicating the important role of agave fructans on the maintenance of healthy bone," Lopez said. "They can be used in many products for children and infants to help prevent various diseases, and can even be used in ice cream as a sugar substitute." Read the full article here.

7 Seasonal Snacks You Must Eat This Season 03/18/10

By Divya Gugna - It happens every year. At some point in mid-March, I open my fridge and realize that I'm in the midst of a culinary rut. It's still too cold to dust off my smoothie-maker and switch into summer food mode, but I can't look at another heavy stew and the thought of cooking anything with the sad, shriveled butternut squash lying in my veggie drawer makes me queasy. This is usually the point at which I tell myself that it's time to clean out the kitchen and swap in some fresh, seasonal ingredients that will make for interesting recipes without wrecking havoc on my anticipatory summer workouts. Here are my top picks for this year's springtime produce essentials that will be sure to brighten up your menu. Agave Nectar: If you're like me, you probably don't like the idea of adding chemical sweeteners to your drinks but still crave some sugar in your morning coffee. That's where agave nectar comes in. That's right--the same plant that produces tequila is also the source of an all-natural sweetener that won't cause your blood sugar or appetite to skyrocket. Use this neutral flavored syrup in place of artificial or refined sugars in drinks, desserts or in a refreshing springtime cocktail like the Ginger Strawberry Mojito. Read the full article here.
