Chef Adam Weiss, Gather Restaurant
"I use Nature's Agave Nectars in place of sugar for most items as often as I can... I use it for my jams and marmalades, all of my sorbets, and often times I toss fresh fruit with agave to help develop their natural flavor and to shine them up for snazzy presentation."

Adam Weiss is the creative inspiration behind Gather Restaurant’s pastries and other sweet desserts. Adam began his culinary career at San Francisco’s Farallon Restaurant before moving on to XYZ where he discovered his passion for pastry. At Gather, Adam goes beyond the standards; exploring alternative flours, spices and condiments to create ingredient driven desserts that are simple, rustic and accessible.

“I try to do desserts that are familiar, but with a twist, using ingredients slightly obscure to most people. For instance, I do a peach crisp with roasted peaches and a quinoa, oat streusel and pickled huckleberries. I also have a cookie plate with different sweets on it, one being a buckwheat sandwich cookie with rhubarb jam.”
