Sweet Potato Pancakes

Yum yum! Try this sweet, delicious and healthier version of Sweet Potato Pancakes, drizzled with Nature’s Agave Raw agave nectar.


Ingredients:

1 cup whole wheat pastry flour (or use a blend of all purpose and whole wheat)
1 Tablespoon of Nature’s Agave Amber or Raw agave nectar
2 Tablespoon canola oil
2 teaspoons baking powder
1/4 rounded teaspoon salt
3/4 cup lowfat milk (or water for non-dairy)
1/4 cup sweet potato puree (use sweet potato baby food in a pinch)
1/3 cup apple sauce
1 egg
1/4 teaspoon cinnamon
1/2 scoop of Chia Seed
Nature’s Agave Raw agave nectar for serving (optional: dust first lightly with powdered sugar).

Method:

Warm up your griddle pan on medium high for 3-4 minutes, then put temperature down to low or medium-low to cook the pancakes.

Whisk together the milk, sweet potatoes, oil, agave nectar, and eggs.  Add the flour, salt, cinnamon and baking powder, and optionally Mila. Whisk till blended.

Spoon out batter onto griddle, bubbles will form on top, when they begin to pop, it is time to flip - it should be a light golden brown.  Cook until other side is golden brown.  Optional: dust with powdered sugar. Serve right away with Nature’s Agave Raw agave nectar in place of maple syrup.
