Summer Shrimp Skewers with Sweet & Spicy Pineapple Salsa

Are you ready for an instant summer classic? Fire up the grill and experience Domenica’s sweet and spicy skewered shrimp. The salsa is a fabulous side dish and can be prepared anytime you want to add fresh color and spicy sweet to your menu.
Ingredients:
1-2 cups of wood smoking chips (optional)
1-1½ pounds peeled and deveined shrimp
1-2 ears of corn, cut into 1 ½ inch circles
1 cup cherry tomatoes
1 cup crimini or button mushrooms, bottoms removed
2 Tbs Nature’s Agave™ Raw nectar
2 medium or 1 large zucchini cut into 2 inch pieces
Salt and pepper
Splash of extra virgin olive oil
1 cup fresh lime juice
*Spice mix of choice, (meat seasoning, curry spices, Latin spices, etc), optional
Bamboo or metal skewers (if using bamboo make sure to soak in water for 10 minutes so they don’t burn on the grill)
Sweet & Spicy Pineapple Salsa
1 cup pineapple, cut into 1/4 inch cubes or chunks
1 fresh pepper such as jalapeno or serrano, minced* (remove the seeds to cut back on the heat)
1 small shallot, minced
½ cup cilantro, roughly chopped
1 lime, juiced
½ tablespoon toasted ground cumin
½ avocado, cut into small cubes
¼ cup baby tomatoes (grape or cherry) cut in ¼’s
Drizzle extra virgin olive oil
Pinch salt
Method:
Summer Shrimp Skewers
1. Heat your grill to high and add a foil pouch of wood chips.
2. While grill is heating, put shrimp and all the vegetables in a large bowl or large plastic re-sealable bag. Generously coat with salt, pepper, lemon, agave, a drizzle of olive oil and spice mix if using.
3. Let sit for 5-10 minutes to add flavor. Alternately skewer the shrimp and vegetables. Place on the grill and turn the heat down to medium high. Cook for 5-7 minutes.
Sweet & Spicy Pineapple Salsa
Toss pineapple with pepper, shallot, cilantro, lime juice, cumin and avocado and tomato.
Drizzle with extra virgin olive oil to moisten, add salt to taste.
*Be careful when mincing a hot pepper. The spicy juices absorb easily into your skin and can sting. Rub a bit of olive oil on your hands before handling to create a barrier.
