Skinny Spinach Frozen Margarita or Green Monster Lime Smoothie (Virgin)

yield: 4 margaritas or smoothies

Looking for a refreshing margarita full of vitamins, minerals and fiber? It’s delicious! Make this on your next social gathering - you don’t have to tell anyone its healthy until after they taste it!


Ingredients:

Juice from 4 fresh limes
1/4 lime (skin on)*
4 oz. water
4 oz. tequila (if making virgin, replace with water)
1 big handful of raw baby spinach
1/2 cup of frozen peaches or mangoes
3 - 4 oz. Nature’s Agave Clear  (taste and adjust for desired sweetness)
1-2 Tablespoons of Chia Seed
Approx 1 cup of Ice (adjust for desired thickness)

Method:

Put all ingredients into a blender and blend until smooth - pour into glasses and serve immediately. Garnish glass with a slice of lime.

*Note: this recipe is best with a Vitamix blender - you might wish to omit lime with skin and Chia Seed if not using a Vitamix, as some of the texture might still remain.

Uses Agave instead of sugar or HFCS - which is low glycemic
Spinach adds folate, fiber and other vitamins, minerals
Chia Seed adds fiber, omega 3s and helps to keep you hydrated.
