Agave-Smoked Onion Jam

Are you ready for this? Oh yeah, agave-smoked onion jam is a show-stopper! Might want to keep this recipe to yourself, if you know what I mean.  Try this on grilled pork, beef, burgers or chicken to add a sweet barbecued component.


Ingredients:

4 red onions-smoked, then chopped
¼ Cup Nature’s Agave Raw (dark) agave syrup
¼ Cup sugar
1 Teaspoon Dijon mustard
1 Teaspoon tomato paste
1 Teaspoon cumin
1 Tablespoon chili powder
2 Tablespoon salt
¼ Cup red vinegar
1 ½ Cup red wine
1 Tablespoon powdered gelatin-bloomed in 1 Tablespoon cold water

Method:

Put smoked-chopped onions to a medium sauce pan over medium heat along with agave syrup and sugar. Cook long enough to dissolve sugar granules and mixture begins to bubble.

Add Dijon, tomato paste, cumin, chili powder and salt. Stir in well to dissolve into mixture.

Add cider vinegar and simmer at medium high heat for about 10 minutes.
Add red wine and reduce so that almost all liquid is evaporated. Your ingredients should be the consistency of jam at this point.

Stir in bloomed gelatin and allow to cool before using.
