“Brainy” Banana Bread

Here’s a healthier twist on one of our favorite baked treats. You and your kids will love it!


Ingredients:

3/4 cup whole wheat pastry flour
1/4 Cup All Purpose Flour (or you can use 1 Cup whole wheat pastry flour and omit all purpose)
- 1/2 cup Nature’s Agave Amber or Clear agave
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 Cup mashed ripe bananas (approx. 3 bananas)
- 1/3 Cup butter/margerine
- 2 Tablespoons milk

Method:

Put all of the above into mixing bowl, and mix on low till blended, then mix on high for 2 minutes.
Put 2 scoops Chia Seed into a ¾ measuring cup – then fill up the rest of the measuring cup with whole wheat pastry flour*

Add to mixer:

- 2 eggs
- Chia Seed
Beat till blended, then stir/fold in:
- ¼ cup chopped walnuts * optional

Pour into a greased loaf pan, and bake for 55 minutes.  Or pour into two mini-loaf pans, bake approx. 40-42 minutes. Test to see if toothpick comes out clean when inserted near center before taking out of oven. Cool 10 mins on wire rack & enjoy!
